Peppercorn crusted grilled bison flank marinated in balsamic vinegar and olive oil, and layered with arugula, tomato, and pecorino cheese, then dressed with a thyme and red wine reduction
Red Pepper Jelly Infused Duck Breast
Seared duck breast glazed with a rosemary & red pepper jelly and finished with a bourbon blackberry pan jus
Pan Seared Roasted Chicken
Tender pieces of golden pan seared chicken roasted in a rosemary and thyme white wine & lemon relish then nestled with a shallot and garlic cream sauce
Roasted Sweet Potato Crisps
Creamy Herb Pomme Puree
Basmati And Wild Rice Pilaf with Chickpeas and Cranberry
Chef’s Selection of Roasted Vegetables
Menu selection to also include a full salad bar with both leafy and mixed salads as well as pickles, relishes and crudité.

Silent Auction
We are seeking silent auction items or other types of donations (i.e., themed package ideas, sponsorship, etc.). If you act now, you and/or your company can receive several name mentions on our website, social media, banquet program, and in direct messaging to our members.
With your support funds raised at the event will be used for Lethbridge Fish & Game projects, with some past projects being habitat conservation, enhancement projects and programs such as the CPR Lake Stewardship Project, the Ridge Reservoir Habitat Project, the Alberta Wild Turkey Translocation project and the Alberta Fish and Game Association Wildlife Trust Fund (www.afga.org/wildlife-trust-fund-properties).
